Vitamin E and Lou Gehrig's Disease (ALS)
"Lou Gehrig's disease, technically known as amyotrophic lateral sclerosis (ALS) is a nerve disorder that causes progressive muscle weakness. It usually begins with weakness in the hands or feet, which then spreads to the rest of the body. Affected muscles become spastic (tight and prone to spasm) and ineffective. As the weakness spreads, speaking, breathing, and swallowing become difficult. ALS is always fatal, and most people die within 3 years of being diagnosed.  The cause of ALS is unknown and there is no cure for the disorder. A number of alternative treatments have been tried, with mixed results. These include BCAAs (branched-chain amino acids), creatine, vitamin B12, CoQ10, genistein, and guanidine.
A recent study evaluated the potential benefits of vitamin E for ALS. Vitamin E is a potent antioxidant, capable of fighting dangerous natural substances known as
free radicals. It has been hypothesized that free radicals might play a role in ALS,
and that, therefore, antioxidants might slow the progression of the disease."

".by avoiding milk, perhaps the richest source of calcium in the American diet, they are setting themselves up for osteoporosis and bone fractures long before that disease would otherwise show up. It's a public health problem in the making. A panel of experts convened by the National Institutes of Health concluded that nine out of 10 girls and three out of four boys ages 9 to 17 do not get enough calcium. Nor do they get enough vitamin D that helps them absorb what little calcium does creep into their diets. "It will be an epidemic when 90% of the girls develop fractures in their 50s, 60s and 70s rather than their 80s and 90s," says Dr. William Russell, a pediatric endocrinologist at Vanderbilt University Medical Center and a member of the NIH panel. Unlike most epidemics, however, this one is largely preventable."

*** HEALTHY RECIPES - Grilled Chicken Salad
Serves 4***

Grilled Chicken Salad

Ingredients
1 1/2 pounds white meat chicken
2 cups cooked corn kernels
1- 1/2  cups cooked black beans
1/2 cup cooked kidney beans 
1 cup chopped tomatoes
1/2-cup onions, chopped
2 tablespoons celery seed
2 tablespoons chopped cilantro
2 tablespoons lime juice
2 tablespoons olive oil
Sprinkle of tarragon
Salt and pepper to taste


Grill chicken over medium flame until done.  Combine chicken, corn, beans, tomatoes, onions, celery seed and cilantro in a bowl.

Mix remaining ingredients in a separate cup and pour over chicken mixture.  Mix well. Season to taste.
