12 oz. cooked turkey breast, cut into small cubes
1 tbsp wine vinegar
¼ cup vegetable broth
1 clove garlic, minced
1 Tbsp mustard seed
1/4 cup olive oil
1/2 cup low fat Parmesan cheese, grated
2 cups Romaine lettuce, shredded
1 cup Tomatoes, diced
1/2 cup chopped black olives
salt and pepper, to taste

In a large bowl, mix wine vinegar, broth, garlic, mustard seed, oil,
Parmesan, olives, tomatoes, salt and pepper. Add the turkey and Romaine
lettuce and toss.

Serves 2.
