But a new study shows that this herb shouldn't be taken lightly as it can cause life-threatening allergic reactions.  Echinacea is commonly taken to help prevent colds and other infections. But as with other supplements, the dangers of Echinacea are somewhat a mystery.  Two allergy specialists in Australia were asked to see five people after each one had an apparent reaction to Echinacea. The study appears in the January issue of Annals of Allergy, Asthma, and Immunology.  After taking Echinacea, two of the five people developed a severe, life-threatening reaction called anaphylaxis. When this occurs, breathing is
difficult due to swelling in the airways, and blood pressure can fall to deadly

CALCIUM - "Many women increase their calcium intake, unaware that the body
also requires magnesium. The body keeps the two minerals in balance, therefore
increasing one without increasing the other really does not have any real benefit as the body simply disposes of the excess.  Optimally one should consume 1,000 milligrams of each per day. However, your intake should increase with age. After menopause the recommended daily allowance is 1,500 milligrams. Remembering always to have that balancing component. McMaster University researchers have recently reported the importance of pregnant women increasing their calcium intake to 1,500 to 2,000 mg per day. The results of their study indicated that this could reduce the risk of pregnancy-induced hypertension and pre- eclampsia; two of the highest levels of concern in pregnancies, by 70% and 60% respectively."

*** HEALTHY RECIPES -***
Finger Sandwich appetizers - (Serves 4)

1/4 cup balsamic vinegar
4 cloves of chopped garlic
4 Tbs. Olive oil
2 tsp. mustard seed
1 large yellow onion, chopped
salt and pepper, to taste
6 large Portobello mushrooms, chopped
2 large tomatoes, sliced very thin
1 large green pepper, chopped into small pieces
1 cup low-fat/non-fat mozzarella
1/2 loaf of Italian bread

Preheat oven to 350 degrees.  In a small bowl, mix vinegar, garlic, oil, mustard seed, onion, salt and pepper.  Slice bread into appetizer size pieces.  Coat pieces of bread with mixture.  Place on top of bread pieces tomato slices, mushroom and green pepper.  Sprinkle generously with mozzarella cheese.  Bake for 15 minutes.  Serve hot/warm.
