"In the Far East ginseng has been used as a general tonic, and only incidentally
as an aphrodisiac, for at least 5,000 years. Ginseng root became so desirable
that, it is said, Chinese emperors were willing to pay its weight in gold. Dr
Fulder's research has shown that ginsengosides act by enhancing the effect of
the receptors which respond to circulating steroids, so that smaller quantities
of natural steroids are able to achieve a greater effect than would otherwise

"Walnuts aren't just weapons anymore. Spanish researchers fed people with high
cholesterol a heart-healthy diet (vegetables, fish, very little red meat or
eggs, olive oil as the only cooking fat) for 12 weeks. For half of the time, the
researchers cut the amount of olive oil by 25 percent and made up the fat
calories with walnuts. Though LDL cholesterol levels dropped during both halves
of the 12 weeks, they dropped significantly more during the walnut weeks. "These
results came from only eight to 11 walnuts a day," says Joan Sabatè, M.D.,
Dr.P.H., the study author, from Loma Linda University in California. It's
possible that a combo of monounsaturated fats (olive oil) and polyunsaturated
fats (walnuts) whacks cholesterol."

USA: A diet rich in red, green and yellow fruits and vegetables may help keep
lungs healthy
"A dietary study by University at Buffalo nutrition researchers has shown that
lutein and zeaxanthin, rather obscure antioxidant vitamins in the carotenoid
family, have a significant positive effect on lung health. Study participants
who ate half the average amount of foods containing lutein and zeaxanthin showed
a reduction in lung function equivalent to 1-2 years of aging, results showed.
The study, published in the 1 March issue of the American Journal of
Epidemiology, shows that dietary carotenoids other than beta-carotene,
the most frequently investigated nutrient in that family, are
associated positively
with lung function. Carotenoids are antioxidant vitamins found primarily in
orange, red, green and yellow vegetables and fruits. Green leafy vegetables such
as spinach, kale and collard greens are good sources of lutein and zeaxanthin."

*** HEALTHY RECIPES - Baked Salmon - Serves 2***
INGREDIENTS:
12 oz. salmon fillet
3 cups zucchini
1 cup chopped onion
1 cup diced scallion
1/2 cup chopped celery
3 diced tomatoes
2 cups sugar free Italian salad dressing
sea salt
black pepper
2 tablespoons mustard seed
1 cup lemon juice
2 tablespoons olive oil
Marinade salmon in salad dressing, lemon juice, salt, pepper & mustard seed for
2-3 hours. Preheat oven to 350 degrees.
When salmon is ready to be baked, place all other ingredients on a small
skillet and cook in olive oil for 3-5 minutes, until vegetable are slightly
tender. Season vegetables with salt and pepper to taste. Pour vegetable
mixture into baking pan with salmon and cook for 15 - 20 minutes until done.
