In the study, obese women who reduced the "energy density" of their diet by

Genistein, a natural phytoestrogen derived from soy products, worked better than
placebo pills at building bone mineral density in a two-year study of older,
postmenopausal Italian women.
After two years, those taking the soy product had better bone mineral density
than those taking placebo. "[Even] after one year, there was a clear difference
in the women who got the genistein," said Steven Wilson, a biostatistician at
National Jewish Medical and Research Center, Denver, and a co-author of the
study, published June 19 in the Annals of Internal Medicine.

The chemical traces of cigarette smoke may show up in babies of parents who
smoke, according to a new study.
The study shows that cotinine, a chemical released when the body breaks down
nicotine, is more abundant in urine samples from smokers' babies than from
nonsmokers' children.

this 175-recipe cookbook on the Food Guide Pyramid guidelines recommended by the

The idea is to reduce fat by making ingredient substitutions and small
alterations, but not making drastic changes. The recipes are varied and creative
and don't resemble "diet food": Ginger Shrimp Kabobs, Vegetable Potstickers,
Stuffed Veal Chops with Cider Sauce, Vegetable and Ham Jambalaya, Curried
Chicken and Nectarines, Caribbean Fish Salad, and Thai Shrimp and Rice Noodle
Nests. The desserts include Chocolate Swirl Cheesecake with Raspberry Topping
(only 20 percent fat!), Blueberry-Lime Torte (about 15 percent fat), and Double
Chocolate-Date Cake (about 25 percent fat).
Recipes are labeled with symbols indicating "low-calorie," "low-fat,"
"moderate-fat," "low-cholesterol," and "moderate-cholesterol," so you can choose
how far you want to go. Each recipe has a hefty amount of nutritional
information: calories, fat, saturated fat, cholesterol, carbohydrate, fiber,
protein, vitamins A and C, calcium, iron, and diet exchanges. Cooks who love

Brown Rice and Shitake Mushroom Pilaf
1/2 cup dried Shitake mushrooms (approx. 1/2 ounce), soaked in 1 quart boiling
water
1/2 cup diced carrot
2 teaspoon minced fresh garlic
1/2 cup diced celery
1 pound brown rice, dry weight
1/8 teaspoon salt
1 tablespoon soy sauce
1 teaspoon black pepper
1/2 cup chopped green onions
Soak mushrooms overnight or until softened. Drain and reserve soaking liquid.
Rinse mushrooms and pat dry. Cut off stems and discard; thinly slice the caps.
Add enough water (or broth) to soaking liquid to make 1 quart and bring to a
boil in a large saucepan. Add rice, carrot, celery, garlic, and salt. Stir
gently and reduce to low heat. Cover and simmer until rice is tender and all
liquid is absorbed, approximately 45 minutes. Remove from heat; add soy sauce,
black pepper, and green onions and fluff with a fork.
