* Low 'energy density' foods aid weight loss *

Foods that fill you up without packing a ton of calories can help in the battle of the bulge, results of a new study suggest.

In the study, obese women who reduced the "energy density" of their diet by cutting their intake of fats and adding more fruits and vegetables lost more weight over a 12-month period, and felt less hungry, than did those who simply reduced their fat intake.

* Soy Compound Helps Builds Bone: Study *

Genistein, a natural phytoestrogen derived from soy products, worked better than placebo pills at building bone mineral density in a two-year study of older, postmenopausal Italian women.

After two years, those taking the soy product had better bone mineral density than those taking placebo. "[Even] after one year, there was a clear difference in the women who got the genistein," said Steven Wilson, a biostatistician at National Jewish Medical and Research Center, Denver, and a co-author of the study, published June 19 in the Annals of Internal Medicine.

* Smokers' Babies Take on Cotinine: Nicotine Byproduct Found in Urine of Infants Whose Parents Smoke Cigarettes *

The chemical traces of cigarette smoke may show up in babies of parents who smoke, according to a new study.

The study shows that cotinine, a chemical released when the body breaks down nicotine, is more abundant in urine samples from smokers' babies than from nonsmokers' children.

* Hospital emergency rooms try to cut wait times: Electronic tracking boards allow for faster handling of sick patients *

It's the sort of promotion you might expect from a pizza delivery chain, not a U.S. hospital system.

Like the pizzeria that picks up the bill for taking too long, a Kansas City hospital offers cinema passes and a Detroit hospital system gives away major league baseball tickets to patients who wait half an hour for emergency room service.

* Alternative Medicine *

"I wish I'd researched the alternatives first, Dawson!" moaned my peppy red-haired friend Bill, holding his head despairingly in his hands. "But we just plunged right into surgery and radiation when Janice was diagnosed with thyroid cancer. She became feeble. Her immune system is weak. The treatment almost killed her. It's been almost two years since she's been able to eat solid food."

It broke my friend's heart to see his wife's health take a dive headfirst. I could hear it in his voice, and see it in his body language. Just talking about it, brought him to tears.

* Spirituality *

If you take a stroll through the self-help and spiritual section of any bookstore, you'll notice a rich spiritual dialogue all over the map with enough in common to indicate our observations are on the same route. It appears everyone is still asking the same questions. Is it possible to combine our own beliefs with a truth that is collected from life's experiences and call it "spirituality"?

What is spirituality?

* Sports Injuries *

About 80 percent of the world's residents suffer from lower back pain at one time or another. And unlike popular belief, an athletic lifestyle offers no warranty against the problem. Improper weight training or sporting activities technically actually increases the load on one's back and may cause pain. In fact, lower back pain is a common ailment among weightlifters, runners, cyclists, and other athletes. And until now no one has been exactly sure what sports-minded people should do to alleviate -- or prevent -- the complaint.

*** Book Review: Betty Crocker's Low-Fat, Low-Cholesterol Cooking Today - By Betty Crocker Editors ***
-------------------------------------------------------------

Betty Crocker is on the health bandwagon. Not one for fads, Betty sensibly bases this 175-recipe cookbook on the Food Guide Pyramid guidelines recommended by the American Heart Association and many other medical and nutrition professional organizations. You learn tips for cutting down on fat and cholesterol, understanding the different kinds of fat, and making smart food choices for heart health.

The idea is to reduce fat by making ingredient substitutions and small alterations, but not making drastic changes. The recipes are varied and creative and don't resemble "diet food": Ginger Shrimp Kabobs, Vegetable Potstickers, Stuffed Veal Chops with Cider Sauce, Vegetable and Ham Jambalaya, Curried Chicken and Nectarines, Caribbean Fish Salad, and Thai Shrimp and Rice Noodle Nests. The desserts include Chocolate Swirl Cheesecake with Raspberry Topping (only 20 percent fat!), Blueberry-Lime Torte (about 15 percent fat), and Double Chocolate-Date Cake (about 25 percent fat).

Recipes are labeled with symbols indicating "low-calorie," "low-fat," "moderate-fat," "low-cholesterol," and "moderate-cholesterol," so you can choose how far you want to go. Each recipe has a hefty amount of nutritional information: calories, fat, saturated fat, cholesterol, carbohydrate, fiber, protein, vitamins A and C, calcium, iron, and diet exchanges. Cooks who love knowing what the dishes should look like will enjoy the 45 mouth-watering color photos. --Joan Price

Brown Rice and Shitake Mushroom Pilaf

1/2 cup dried Shitake mushrooms (approx. 1/2 ounce), soaked in 1 quart boiling water
1/2 cup diced carrot
2 teaspoon minced fresh garlic
1/2 cup diced celery
1 pound brown rice, dry weight
1/8 teaspoon salt
1 tablespoon soy sauce
1 teaspoon black pepper
1/2 cup chopped green onions

Soak mushrooms overnight or until softened. Drain and reserve soaking liquid. Rinse mushrooms and pat dry. Cut off stems and discard; thinly slice the caps. Add enough water (or broth) to soaking liquid to make 1 quart and bring to a boil in a large saucepan. Add rice, carrot, celery, garlic, and salt. Stir gently and reduce to low heat. Cover and simmer until rice is tender and all liquid is absorbed, approximately 45 minutes. Remove from heat; add soy sauce, black pepper, and green onions and fluff with a fork.
