* Kids can learn to eat healthy fats, study says: Teaching children how to eat
well may help them carry habits into teens *
Teaching children from a young age to eat a low-fat diet can be effective --
even as they reach their teens and begin eating more meals away from home,
according to a new study.
The study of children in Finland found that those who were taught to focus on
healthy fats -- those found in fish, nuts, seeds and oils from plants - had
slightly lower cholesterol levels compared to those who ate an unrestricted
diet.

* Tape measure, not scale, key to knowing heart risk *
A quick check around the waist with a tape measure may be a better way of
telling if you are at risk of heart disease than stepping on a scale,
researchers said Monday.
Even if people are not overweight, those with larger waistlines are more likely
to show the early signs of heart disease than those with smaller waists, the
team at University of Texas Southwestern Medical Center in Dallas reported.

* Scientists seek better tests for Lyme *
President Bush's recently revealed treatment for Lyme disease makes him part of
an unfortunate trend: The tick-borne infection is on the rise, with cases more
than doubling in the past 15 years. The good news is that most patients, like
Bush, take antibiotics for a few weeks and are cured, especially if they were
diagnosed early.
But people who aren't treated promptly can develop painful arthritis, meningitis
and other serious illnesses. If they don't experience, or notice, Lyme's
hallmark round, red rash, they can struggle to be diagnosed, as other early
symptoms are flu-like and vague.

Thirty minutes of walking three times a week may be enough to help lower blood
pressure and start you on the path to better health.
A new study shows that even a little bit of weekly exercise is enough to lower
blood pressure and improve overall fitness. The results showed that 30 minutes
of walking three times a week -- even if it was broken into 10-minute walks
throughout the day -- was enough to have a healthy effect on blood pressure as
well as measurements around the waist and hip.

"Stress is killing us," warns Talbott, and "humans are not zebras"; unlike the
rest of the animal kingdom, our fight-or-flight reactions to physical and
emotional disturbances can lead to prolonged, chronic stress and elevated levels
of cortisol. Over the long term, excessive amounts of this "primary stress
hormone" can "kill your sex drive, shrink your brain, squelch your immune
system, and generally make you feel terrible." While Talbott freely admits that
nearly as many ways to cope with stress exist as events and situations that
cause it, his recommended solution to alleviating tension and achieving balanced
cortisol levels is the SENSE program. These five principles -- Stress
management, Exercise, Nutrition, Supplements and Evaluation -- aren't
necessarily groundbreaking, but they're undoubtedly sensible. Talbott is a
nutritionist, and thus the book's coverage of vitamins, minerals, and adaptogens
(general anti-stress supplements) is especially comprehensive, and includes
important recommendations for safety and dosage levels. With features including
a "Stress Self-Test," daily food plans, and a guide to additional stress
management resources, the text is organized for both quick reference use as well
as for readers, especially health care workers, interested in conducting a more

Cauliflower au Gratin
4 cups cauliflower florets
1 1/2 tablespoons cornstarch
1 1/2 cups skim milk
1/2 cup shredded reduced fat cheddar cheese
1 1/2 tablespoons grated Parmesan cheese
1/8 teaspoon dry mustard
1/8 teaspoon pepper
1 tablespoon dry breadcrumbs
Steam cauliflower until crisp-tender. Place cauliflower in an 11x7x2 inch baking
dish sprayed with cooking spray. Combine milk and cornstarch in a saucepan and
heat over medium heat until thickened, stirring constantly. Stir in cheddar
cheese and 1 tablespoon Parmesan cheese, mustard, and pepper and continue to
cook and stir until cheese melts. Pour sauce over cauliflower and sprinkle with
remaining Parmesan cheese and breadcrumbs. Broil for 5 minutes or until cheese
melts and breadcrumbs begin to brown.
