Contrary to popular belief, many people with foot problems do not have any pain in their feet. Instead, the area of pain is transferred up the body, to the knees, hips, lower back, or even neck. Parmesan Puffed Potatoes

2 medium baking potatoes, peeled and cubed
1/4 cup grated Parmesan cheese
2 tablespoons skim milk
1/8 teaspoon salt
1/8 teaspoon ground white pepper
1/8 teaspoon ground nutmeg
1/4 cup egg substitute
1 tablespoon grated Parmesan cheese



Cover potatoes with water and heat to boiling. Boil for 30 minutes or until tender. Drain and mash potatoes. Add 1/4-cup Parmesan cheese and next 4 ingredients and beat with an electric mixer until smooth. Stir in egg substitute. Use a pastry bag or spoon to form 6 mounds of potatoes on a baking sheet sprayed with nonstick cooking spray. Sprinkle with remaining Parmesan cheese and bake at 350 degrees for 25-30 minutes or until lightly browned.

Serving Size: 1 potato puff (approx. 6 ounces)
