The idea that a woman's personality traits can make her more prone to breast cancer appears nothing more than a myth, according to a Dutch study.

Women who were unemotional, depressed or anxious were no more or less likely to get breast cancer than any other women, the study found. Nor were women who were optimistic, angry or understanding, or had any combination of personality traits.

Food is the one thing that Americans hate to love and, as it turns out, love to hate. What we want to eat has been ousted by the notion of what we should eat, and it's at this nexus of hunger and hang-up that Michael Pollan poses his most salient question: Where is the food in our food?

What follows in "In Defense of Food" is a series of wonderfully clear and thoughtful answers that help us omnivores navigate the nutritional minefield that's come to typify our food culture. Many processed foods vie for a spot in our grocery baskets, claiming to lower cholesterol, weight, glucose levels, you name it. Yet Pollan shows that these convenient "healthy" alternatives to whole foods are appallingly inconvenient: our health as a nation has only deteriorated since we started exiling carbs, fats -- even fruits - -from our daily meals.

Ham Stuffed Potatoes

20 small red potatoes
1 cup diced cooked lean, low sodium ham
1/3 cup plus 1 tablespoon light ricotta cheese
1/4 cup reduced fat cream cheese
1 tablespoon minced onion
1 tablespoon Dijon-style mustard
Fresh parsley sprigs

Place potatoes in a vegetable steamer and steam over boiling water for 15-20 minutes or until tender. Remove from steamer and let cool. Scoop out center using a melon ball scoop and save pulp for another use. Combine ham and next 4 ingredients and mix well. Fill center of potatoes with 2 teaspoons of ham mixture and garnish with fresh parsley sprigs.

Makes 10 Servings
Serving Size: 2 potatoes
