* Vegetables tied to lower breast cancer risk *

Cruciferous vegetables may help lower the risk of developing breast cancer, particularly for women who carry a particular gene variant linked to the disease, a new study suggests.

Researchers found that among more than 6,000 Chinese women, those with the highest intake of Chinese cabbage and white turnips had a somewhat lower risk of postmenopausal breast cancer than those with the lowest intake.

The findings, reported in the American Journal of Clinical Nutrition, add to evidence that compounds in cruciferous vegetables may help fight cancer.

Jalapeno and Rice Casserole

2 cups water
1/2 teaspoon vegetable or chicken flavored bouillon granules
1 cup converted rice, uncooked
1/2 cup plain nonfat yogurt
2 tablespoons reduced fat creamy Italian salad dressing
1 tablespoon chopped fresh parsley
1 jalapeno pepper, seeded and chopped
1/3 cup shredded, reduced fat Monterey jack cheese

Combine 2 cups water and bouillon granules in a medium saucepan and bring to boil. Stir in rice, cover and simmer for 25 minutes or until rice is tender and liquid is absorbed. Stir in yogurt and next 3 ingredients and mix well. Spoon mixture into a baking dish sprayed with nonstick cooking spray. Bake at 350 degrees for 20 minutes. Sprinkle with cheese and continue baking for 5 minutes or until cheese melts.
