Fat in Mothers Diet may Cause Allergies in Children
"Asthma, eczema and hayfever are all related; together, they are called atopic disease or atopy. Children with a family history of atopic disease are more likely to develop it themselves. This is true even if it is the father or a sibling who has atopic disease, and not the mother.   An interesting new study suggests that fat in the diet may play a strong role in "passing on" atopy.1 This study followed 114 infants at high risk of developing atopic disease based on family history.   Researchers closely evaluated the diets of the mothers during the breastfeeding period. The results showed that when women consumed high amounts of saturated fat (animal fat), their children were significantly more likely to inherit atopy."

People Are Eating More Fruits and Veggies - Just the Wrong Kind
"Dark green veggies aren't always liked and cruciferous is a strange word. But those are exactly the types of vegetables people need to get more of. Though many of these veggies have a bitter taste, they're also the ones with high amounts of antioxidants, which help prevent damage in the body's cells. Vegetables high in antioxidants include:

    Dark green lettuce
    Brussels sprouts
    Kale
    Spinach
    Mustard greens
    Broccoli
    Swiss Chard

Unfortunately, fewer than one in five Americans were consuming enough cruciferous vegetables like broccoli, cauliflower, kale, and Brussels sprouts, according to the new survey, in which the government questioned almost 5,000 men and women between 1994 and 1996.  An analysis of the data, led by researchers at Arizona State University East in Mesa, shows that of the nearly 45% of Americans who consumed at least five servings of fruits and vegetables daily, lettuce and tomatoes were among the most popular items. White potatoes accounted for about one serving, and French fries accounted for more than one-third of a serving."

*** HEALTHY RECIPES- Avocado salad plus***

2 cups chopped romaine lettuce
5 plum tomatoes  (peeled and de-seeded)
3 large celery stalks
1 red onion
1/2 cup shredded red cabbage
2 avocados
1 clove garlic (grated)
 1 Tbsp. Fresh chopped dill
1 large lime
 3 Tbsp. Fresh lemon juice
Sea Salt
ground pepper

Dice the tomatoes and avocados into 1-inch cubes.  Dice the celery stalks and onion into small pieces.

In a large salad bowl, combine chopped lettuce, tomatoes, celery, onion, red cabbage, garlic, dill, lemon juice, salt and pepper to taste.  Mix well.  Squeeze a touch of lime juice over mixture.  Serve chilled.
