In his eyes, the best was, of course, the French, followed by the Chinese and, in third place, the Peruvian. He didn't mention them. Although Escoffier might not have created this list, it is a fulfilled prophecy: Lima, the capital of Peru, is currently the best place in the universe to get a taste of the best cuisine in its restaurants.
