Groundnut is given much importance as it is a rich source of energy contributed by oil (48- 50 %) and protein (25-28%) in the kernels. It is calculated that a 100 grams of shelled groundnuts could provide an energy of approximately 564 kilo calorie. Antioxidants present in peanut oil include p-coumaric acid and resveratol.
