“Anti-Inflammatory, Lowers Cholesterol, Prevents Cancer, Prevents Macular Degeneration, High in Protein, and More”

I look forward to freshly made tacos at our house. The smell of freshly cooked organic corn tortillas, the making of great organic guacamole, and the fun of putting it all together will surely please everyone. And this dish is anti-inflammatory, lowers cholesterol, high in protein, helps to prevent cancer, prevents macular degeneration, full of vitamins and minerals, and so much more.

Another Whole-Foods Plant-Based Recipe

Ingredients:

For Tortillas

3 - Cups of Organic Masa Harina Corn Flour — I like the white or the yellow but the white is a bit softer for some reason.

1 - Cup or Less of Filtered Water — you can tell if you are making a nice firm dough - add water as needed.

Dash of Salt

Making the Tortillas - Mix everything together and make a firm dough and then let sit for 30 minutes to one hour. Then make round balls about 1 1/2 inches in size and flatten out with your hands or use a tortilla press and place on a griddle until they are firm and slightly brown. — Very Easy to Make

For Filling

3 - Ripe Organic Avocados Mashed with a Little Salt and Minced Organic Garlic and a bit of fresh lemon juice for the Guacamole

3 - Cups of Organic Brown Rice Cooked with a Bit of Turmeric and Garlic Powder — adjust the seasonings to what you like. You don’t want to taste the turmeric - just enough for that yellow color.

1 - Cup of Organic Lentils - Cooked and Then added to the Rice

1 - Organic Cucumber - Chopped

1/2 - Cup of Organic White Onion - Chopped

1 - Large Organic Tomato - Chopped

2 - Cups of Organic Lettuce - Chopped

1 - Cup of Organic Kale - Chopped

1 - Cup of Organic Green or Black Olives Sliced

12 - Oz of Organic Low Sodium Taco Sauce

Making the Tacos

Take one of the freshly made tortillas and add a layer of lentil rice, then a layer of cucumber, lettuce, kale, olives, onion, add the guacamole and then the taco sauce and you have a meal fit for a king.

Remember the correct way to eat a taco is to turn your head to take a bite… keeping the taco upright and level.

Makes 12 to 15 Tacos

Serves 6 People or 3 Hungry Guys
