Aaloo rasedar

•Potatoes,boiled , 1/2 inch pieces 4 medium
•Yogurt 1 cup
•Gram flour (besan) 1 tablespoon
•Salt to taste
•Turmeric powder 1/4 teaspoon
•Pure ghee 2 tablespoons
•Cumin seeds 1/2 teaspoon
•Asafoetida a pinch
•Curry leaves 7-8
•Ginger,chopped 1/2 inch piece
•Green chillies,chopped 2
•Red chilli powder 1/4 teaspoon
•Garam masala powder 1/2 teaspoon


1. Whisk yogurt with gram flour, salt and turmeric powder.

2. Add three fourth cup of water and mix well.

3. Heat ghee in a pan. Add cumin and then add asafoetida, curry leaves, ginger and green chillies. Sauté for a minute.

4. Add red chilli powder and the yogurt mixture and mix well. Add potatoes and cook stirring continuously.

5. Once the mixture comes to a boil, reduce heat and simmer for five to six minutes till potatoes are soft. Garnish with garam masala powder and serve hot.

Achari Gobhi


Cauliflower 1 medium
•Onion 1 medium
•Mustard oil,filtered 1 1/2 tablespoons
•Mustard seeds 1/2 teaspoon
•Cumin seeds 1/2 teaspoon
•Fenugreek seeds (methi dana) 1/4 teaspoon
•Fennel seeds (saunf) 1/2 teaspoon
•Cumin seeds,crushed 1 teaspoon
•Onion seeds (kalonji) 1/4 teaspoon
•Asafoetida 1/4 teaspoon
•Turmeric powder 1/2 teaspoon
•Salt to taste
•Green chillies 3
•Ginger paste 1 teaspoon
•Garlic paste 1 teaspoon
•Yogurt 3/4 cup
•Fresh coriander leaves 1-2 sprigs


1. Chop onions.

2. Heat mustard oil in a non-stick pan then Cool slightly.

3. Separate the cauliflower into big florets.

4. Heat oil again, add mustard seeds, cumin seeds, fenugreek seeds, fennel seeds, crushed cumin seeds, onion seeds and asafoetida and sauté till the seeds splutter.

5. Add onion and sauté till translucent. Add cauliflower florets, turmeric powder and salt. Ad chopped green chillies.

6. Sprinkle some water and toss to mix well. Cover and cook on medium heat for a minute.

7. Add ginger paste, garlic paste and yogurt. Mix well. Cover and cook till the cauliflower is done. Serve hot, garnished with coriander sprigs.
