Choux pastries are commonly used to prepare cream puffs, eclair and profiteroles. Choux pastry depends on rising steam to generate a hollow center that is then filled with custard or cream. When preparing the choux, you need to know how to measure all the ingredients carefully. You should always remember that the oven should not be opened your pastry is done so that the pastry does not fail to puff.

The following are your required ingredients

• 80ml water

• 50g plain flour, sifted

• 40g butter

• Vegetable oil
• 2 eggs

Preparation

• Place the butter and water in a saucepan then place over medium heat. Stir for 3 to 4 minutes until the butter melts. Allow the mixture to come to a boil.

• Add the flour and use a wooden spoon to stir the combination. Place over low heat and cook. Stir for 1 to 2 minutes or until it forms a ball and it starts to get away from the saucepan. Set the mixture aside for about 5 minutes and allow it to cool slightly.

• Whisk 1 egg in a bowl and set it aside. Whisk the remaining egg and add to the mixture of flour. Beat well using a wooden spoon. Gradually add the reserved egg. Beat the mixture until it falls off from the spoon.

• Preheat the oven 200º C.

• Brush the baking tray using oil to grease it lightly. 25 to 30 tea-spoon full of the mixture onto the tray about 3 cm apart. Brush the tops of the mixture a little using the remaining egg.

• Bake in the preheated oven for 25-minutes. Remove the mixture from the oven and turn it off.

• Using a small knife pierce the top to release steam. Return them back into the oven. Leave them in for 15-minutes to allow them to dry. Remove from the oven and place them on the wire rack to cool.

Cream puffs are an elegant appetizer or dessert, depending with the filling. They can be dainty or large depending on how you want them. • Preheat the oven to 400º F

• Heat water with butter in a saucepan to boil

• Stir into the heated water the flour at once, stir until the mixture forms a ball. This should take about one minute.

• Beat in the eggs into the dough the eggs one at a time. Beat the dough until it becomes smooth after adding the eggs.

• Drop using the tablespoon onto an ungreased baking sheet. Bake for 45-50 minutes until the dough becomes puffed and dry. Then cool slowly.

• Cut off the top. Then scoop out the soft dough and fill with the filling of choice including custard, ice cream or whipped cream and replace the lid.
