One question that I get asked all the time is this. Is there a way to make cake flour from all purpose flour? If there is, then how is it done and is it costly?
The great news is that it’s not expensive to make cake flour from all purpose flour, and the even great news is that it’s really easy to make it.
But one thing before I go on is to let you know that if you’re a beginner here, it’s crucial to know the differences that cake flour can make to your cupcakes. Without knowing this difference, I don’t recommend you learn how to make cake flour from all purpose flour because you won’t even know why you’re doing it.
So allow me to take you through the proper stages of turning all purpose flour to cake flour.
Introduction To Cake Flour
All flour that are used for baking are made from wheat flour primarily, and wheat flour is made from two main sources of wheat, namely high-gluten hard wheat and low-gluten soft wheat.
And the proportion of those two main sources of wheat will vary to make cake flour, bread flour, all purpose flour and more.
Cake flour has a higher content of low-gluten soft wheat than all purpose flour and bread flour, so using that for your cupcakes will result in softer cakes that are more tender in texture.
Using Cake Flour In Cupcakes
It isn’t a must to use cake flour in cupcakes, and I always test cake flour in all recipes against all purpose flour.
If the substitution of cake flour results in a more desirable texture, then I’ll make that change. Else, I’ll stick to all purpose flour.
You should do the same.
Test out your recipes using cake flour in your cupcake recipes, and only adapt the change if the desired texture is achieved.
