It is a dessert made up of fresh bananas, vanilla custard cookies and whipped cream that is a bit similar to the famous English recipe trifle. This can be prepared in two ways – baking or refrigerating. However, the refrigerated banana pudding is more preferred especially for those who make home made puddings.

You can make banana pudding in just an hour or even less, so even if you only have a few hours to prepare a meal, you can still manage to serve the best dessert ever for your family or guests. First, you need to decide whether you would want to have a baked or a refrigerated banana pudding. Both of them are delicious but there are some who prefer the cold pudding to the warm one. What you will need for this recipe are 1 cup sugar, 2 cups of milk, 2 eggs, 1 tablespoon of flour or cornstarch, 1 tablespoon of butter, 1 teaspoon vanilla, vanilla wafers and 3 to 4 sliced ripe bananas.

For the preparation of refrigerated banana pudding, what you need to do first is to mix the flour, the sugar and the eggs in a saucepan and mix very well. Place over medium heat and add the milk a little at a time, stirring slowly to make sure that it mixes well with the other ingredients. When it has already thickened, add the butter and the vanilla to taste. Do not put too much vanilla however because it will have a chocolate taste if you do that. In a serving dish, place the vanilla wafers and the sliced bananas in layers. Pour the mixture over the wafers and bananas and then sprinkle crushed wafers at the top. For this, you will need to refrigerate it for a few hours or even overnight.

For the baked banana pudding, there will be a difference of course in the preparation and it might take you a longer time to do it. First, you have to preheat your oven at 375 degrees F.In a bowl, mix the sugar and the flour and stir well. Beat the egg yolks in a saucepan and heat over your burner. Add the flour and sugar mixture gradually along with the vanilla and the milk in an alternate manner. Make sure that you stir it well so that they are completely mixed and that there are no lumps. Add the butter only when the mixture is already thick. When it has reached a pudding consistency, remove from the heat. In a baking dish, line the bottom with vanilla wafers and then put a layer of bananas at the top. Pour over half of the pudding mixture over the wafers and bananas. You will need to prepare the meringue at this time. What you do is to beat 4 egg whites and when soft peaks are formed, add ¼ teaspoon of cream of tartar. Add 5 tablespoons of sugar gradually while beating the egg and then fold ½ teaspoon of vanilla into the mixture to complete the meringue. Spread this mixture over the layers that you have made in the baking dish. Bake this for about 15 minutesor until the meringue has turned brown.
