Yalta Fruit Salad
This delightful Russian fruit salad can be served as a part of a light luncheon or as perfect end to a meal. It is loaded with tons of healthy fruit that will give you a wide variety of vitamins and minerals, but all you will notice is the delightful taste.
Ingredients
・ 1 medium orange peeled and sectioned
・ 1 medium tangerine peeled and sectioned
・ 1 pear peeled, pitted and cut into 1/2 inch bites
・ 3 apples peeled cored and cut into 1/2 inch bites
・ 4 prunes pitted and cooked and cut into 1/2 inch bites
・ 1 teaspoon powdered sugar
・ 1/3 cup light low fat mayonnaise
・ 1 teaspoon fresh lemon juice

Directions
In a small mixing bowl combine mayonnaise and lemon juice and set aside. Prepare fruit and sprinkle with powder sugar, mixing thoroughly to ensure that all the fruit gets sugared. Pour on the dressing, mix gently and refrigerate until ready to serve.
When serving scoop into small dessert bowls or serve on dessert plate on a bed of lettuce.
This lightly sweet dessert makes a wonderful ending to a summertime meal and also makes a great bedtime treat. The wonderful thing about this treat is that it is filled with a number of healthy fruits that gives you a ton of vitamins, minerals, anti-oxidants and fiber all of which are as good for you as this sweet treat tastes. For a slightly different taste and twist on this Russian favorite try substituting low fat french vanilla yogurt for the mayonnaise. This will give your Yalta Salad a slightly sweeter taste.
