Tourists to Mexico are usually surprised by the difference between their idea of Mexican food (influenced by Tex-Mex and other fast foods), and the truth of customary cuisine in Mexico. After all the two types of cooking are actually way apart, and if you go to Mexico and never visit any of the customary restaurants in Mexico, you would be doing yourself and your taste buds a huge disservice. Mexico has some of many modern and exciting dishes in South America and its nationwide cuisine could hold its own against the likes of French cuisine or traditional American cooking.
The primary factor that most visitors notice about Mexican cooking is how necessary vegetables and fruits are to the dishes. Most restaurants in Mexico utilize foods that are available in their local region, resulting in a wide range of various dishes, depending on that area of Mexico you are in.
On the coast, for example, you might find a great number of seafood restaurants, whereas within the South you could be treated to a number of different vegetables and chicken dishes, and in the North you will get fresh steak, red meat and barbeque-style cooking. All of those variations mean that you could travel around Mexico, and never have to eat a similar type of meal twice in the week.
Restaurants in Mexico hold the ideal of home cooking near their heart, that is demonstrated by the number of traditional home-cooked dishes, like the Tortilla soups, or fresh chicken salads. Such dishes are simple to prepare and however are filled with flavor and ingredients, making them filling, tasty and exotic. Even the Pozole, a well-known dish, was once simply a simple winter soup intended to make use of stored or root vegetables.
