INDIAN FRIED RICE
• 1 cup uncooked rice
• 1 small onion, chopped
• 1/3 cup butter
• 1/2 cup raisins
• 2 tsp. instant chicken bouillon
• 1 tsp. curry powder
• 1/2 tsp. salt
• 2 1/4 c. boiling water
• 1/4 c. Toasted slivered almonds

1. Cook the rice and onion in the butter in a large skillet.
2. Cook until the rice is yellow and the onion is tender.
3. Mix raisins, bouillon, curry powder, and salt in the rice.
4. Add the water and stir. Cook over low heat until the liquid is absorbed or rice gets cooked.
5. You can also cook it in microwave. Put a casserole with rice in the oven at 350 degrees for 25 to 30 minutes to absorb the liquid.
6. The almonds can be toasted on a paper plate in the microwave. Stir in the almonds when ready to serve.

Methi Palak Pulao

Ingredients:
• 2 cups Basmati Rice
• 250 ml Coconut Milk
• 3-4 Cardamom Pods
• 250 g Methi Leaves (Fenugreek Leaves, chopped)
• 200 g Palak (Spinach, chopped)
• 2-3 tbsp Ghee
• 4-5 tbsp Vegetable Oil
• 1 pinch Turmeric Powder (Haldi)
• 4-5 Cloves
• 2 tsp Jeera Seeds (Cumin)

Method to cook methi palak pulao
• heat ghee or oil in a pan
• Add jeera.
• When it starts spluttering, add cloves and cardamoms.
• Next, add turmeric powder and curry leaves. Set aside.
• Wash basmati rice and drain water.
• Put the rice in pressure cooker
• In hot water, wash palak and methi and drain the water.
• Add this to rice, along with cardamom and jeera mixture.
• Add coconut milk and 2-3 cups of water.
• Cook until one whistle.
• Serve hot.
