Curry leaf Paneer Rice

Ingredients:

• Basmati Rice - 1/2 cup
• Paneer Cubes - 100 gms
• Shah Jeera - 1/2 tsp
• Sliced Green Chilli – 1
• Grated Ginger - 1 tsp
• Curry Leaves - 1 spring
• Red Chilli Powder - 1/2 tsp
• Butter - 1 tbsp
• Salt
• Oil

Method:

1. Soak the basmati rice for 30 mins.
2. Take a pan heat the required water,add basmati rice and cook till it done.
3. After it gets cooked add salt,oil.Mix it well and keep aside.
4. Heat the oil with butter,add jeera,green chilli and fry for a min.Then add ginger,curry leaves and fry for few mins.
5. Now add red chilli powder,garam masala.salt and fry for a min.Add paneer and mix it well.
6. Finally add rice,mix it well and cook in low flame for 10 mins.Serve hot with raita.

Coconut Rice

• Ingredients:

• 2 cups - fresh coconut milk
• 1 cup - Basmati rice
• 1 tbsp - curd
• 4 nos - red chillies
• 1(big) - onion
• 1 - tomato
• ginger
• garlic
• cashewnut
• salt
• 3tsp - oil
• ghee - 1 tsp

Method:

1. Grind ginger, garlic, red chillies with curd make a smooth paste.
2. Add oil and ghee in a large pan saute onions well.
3. Add tomatoes and the grounded paste and cook it for a few minutes till it leaves oil.
4. Now add coconut milk and bring to boil.
5. Add rice and salt and cook in low flame till rice is cooked.
6. Add fried cashew nuts in the rice.
7. Garnish with coriander leaves.
8. Serve hot with Raita.
