Fruit Crumbler

Ingredients
• 2 apricots - stoned and sliced
• 1 pear - cored and thickly sliced
• 1 punnet of black berries
• 1/2 apple - grated
• 5 Tbsp sugar
• Balsamic vinegar
• For the Topping:
• 170 gm butter - chilled
• 225 gm self raising flour
• 70 gm sugar
• Pinch of salt
• 130 ml butter milk
• Sugar

Method:

1. Preheat the oven to 190 C. Put the fruit into a pan with sugar and the balsamic vinegar, put the pan over the heat, and cook gently until the juices begin to run from the berries.

2. Pour into an oven proof dish.

3. Meanwhile make the topping.

4. Rub the cold butter into the flour until the mixture resembles fine breadcrumbs.

5. Add the sugar and salt stir well, then add the butter-milk to form a loose scone-type mixture.

6. Spoon this over the hot fruit (to get a cobbled effect, flick balls of dough randomly over the fruit), sprinkle with a little caster sugar, and bake in your preheated oven for 30 mins until golden brown.

7. Serve with vanilla ice cream

Two Minute Brownie

Ingredients:
• 3 Tbsp flour / maida
• 2 Tbsp powdered sugar (or according to taste)
• 1 Tbsp vegetable oil
• 2 Tbsp cocoa powder
• 1 Tbsp peanut butter or nutella (optional)
• 2 chopped walnuts (optional)
• 3-4 drops of vanilla essence
• Milk to make a smooth batter out of the ingredients

Method
1. Take a microwave friendly mug. Add all the dry ingredients in it.

2. Now mix in the wet ingredients.

3. Microwave it for a minute or two. (Depends on your microwave.)

4. Enjoy your brownie with ice cream of your choice or chocolate sauce.

Coconut Dream Dessert

Ingredients:

• 1 cup coconut milk
• 2 cup soy milk
• ¾ cup sugar
• 2 teaspoons agar-agar powder, available in Indian and Asian grocery stores
• ¼ teaspoon cardamom crushed
• ¼ cup coconut shredded
• Approx. 20 crushed pistachios
• Pinch of saffron crushed

Method

1. Boil coconut milk, soy milk, coconut, pistachios, and sugar over medium high heat. After milk comes to boil let it boil for about 7-8 minutes, stir occasionally.
2. Mix agar-agar, saffron, and cardamom powder with ¼ cup of lukewarm water making sure agar-agar is dissolved.
3. Add the agar-agar mixture to the milk and mix it well, let it boil for 3-4 minutes. Stir occasionally otherwise agar-agar can become lumpy. Turn off the heat.
4. Pour it into either flat dish or molds, while it is still hot. Note: As milk mixture will cool it will start getting firm.
5. Refrigerate for about 2-3 hours or until set. Serve chill.
