That’s according to researchers at London’s Queen Mary University, who recently conducted a placebo-controlled trial involving dozens of patients and beetroot juice. The juice of the vibrant red root vegetable contains high levels of what’s called inorganic nitrate.
In our bodies, inorganic nitrate changes into nitric oxide, which relaxes and dilates blood vessels. Other leafy vegetables, like lettuce and cabbage, also have high levels of the compound, which they take up from the soil through their roots.
