Zucchini Bread Recipe
I really enjoyed this bread,Fantastic! Nice and moist, I left out the nuts a
nd used a 3/4 C less sugar. great texture.

2 1/2 cups sugar
3 eggs
3 cups flour
3 teaspoons vanilla
1 cup oil
2 cups zucchini, grated
1/4 teaspoon salt
1 teaspoon baking soda
1/4 teaspoon baking powder
1 cup nuts (optional)
3 teaspoons cinnamon

Preheat oven to 350 F degrees.
Combine all ingredients.
Pour into two greased loaf pans.
Bake for one hour.

2 teaspoons vanilla
3 cups zucchini, grated,raw and unpeeled
1 teaspoon cinnamon
1 cup walnuts, chopped (optional)

Beat together eggs, sugar, and oil.
Add the other ingredients, beating well.
Pure the mix in to two oiled and floured loaf pans.
Bake at 350 F degrees for about 1 hour.

3 eggs
2 cups sugar
1/4 cup canola oil
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
1 1/2 cups cornstarch
3/4 cup rice flour
3/4 cup tapioca flour
1 tablespoon xanthenes gum
1 tablespoon cinnamon
1 tablespoon baking powder
1 teaspoon baking soda
2 cups fresh zucchini, grated
1/2 cup walnuts (optional)

Preheat oven to 350 F degrees.
Beat the eggs until foamy, adding sugar, oil, and applesauce (use wire whip attachment for mixer).
In a separate bowl, mix the dry ingredients and then add them to the egg mixture
Switch to the flat beater or dough hook attachment and beat in electric mixer for about 3 minutes or until batter is mixed well and becomes very thick then Add nuts.
Grease two large loaf pans and fill each 1/2 full.
Bake for approximately 1 hour and 10 minutes till the middle is cooked through.
If your oven cooks the tops of these loaves too quickly, Cover with aluminum foil to prevent burning (after about 25-35 minutes).
If you want to use this as breakfast bread, you can sprinkle the tops with Confectioner's sugar.

Low-Fat Banana Zucchini Bread
1 cup white flour
1 cup wheat flour
1 cup rolled oat (Quaker Old Fashioned Oats)
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1/4 teaspoon ground allspice
1/4 teaspoon freshly ground nutmeg
1 teaspoon salt
4 eggs (or Egg Beaters to cut some calories)
1 1/4 cups white sugar
1/4 cup oil
1/2 cup applesauce
2 medium overripe bananas, mashed (the riper, the sweeter)
1 teaspoon vanilla
2 cups shredded zucchini
1 cup raisins (or dates or walnuts)

Preheat oven to 350 F degrees.
Whisk together white flour, wheat flour, oats, baking powder, baking soda, cinnamon, allspice, nutmeg, and salt.
In a separate bowl, beat the eggs.
Add the sugar, oil, applesauce, and mashed bananas to the eggs; mix well an Add the vanilla.
Combine the wet and dry mixtures. Stir until just combined.
Fold in the zucchini and raisins.
Pour into 2 lightly greased loaf pans (9x5-inch).
Bake for 45-50 minutes or until a knife comes out clean.
