Here is a wonderful organic yuca or cassava salad (potatoes can also be used) which if full of great tasting garlic. This salad is easy to make, and can be made ahead of time for dinner with friends, thus nothing has to be done that night. And it’s sure to please everyone and it’s full of great nutrition and it’s very healing.

Ingredients:

12 - Cups of Organic Yuca/Cassava Cut into Small Pieces and Cooked Until Tender - (Potatoes Can Also Be Used).
2 1/2 - Cups of Organic Roasted Red Bell Pepper - Cut into Strips
3 - Cups of Organic Garlic Stuffed Green Olives
12 - Cloves of Organic Minced Garlic
2 - Tablespoons of Organic Garlic Powder
1/2 - Cup of Organic Olive Oil
1/3 - Cup of Organic Italian Seasoning
2 - Cups of Organic White Vinegar
2 - Cups of Filtered Water
Just a little bit of sweetener of choice to take the edge off the vinegar - stevia, honey, agave nectar or something else.
Salt and Pepper to Taste

Take the cooked yuca and add the minced garlic, olive oil, roasted red pepper strips, garlic powder, Italian Seasoning, vinegar, water, sweetener, and salt and pepper to taste and lightly mix everything without breaking apart the yuca. And then place into a glass, ceramic, or plastic container and allow to marinade for at least 24 hours in the frig. (I have actually marinaded this salad for up to a week for really great flavor) Then when ready to serve remove the salad from marinading container and pour into a bowl and it’s ready to eat.

Garlic contains allicin which in double blind studies has been shown to cut your probability of coming down with a cold or flu by 50%. But allicin must be taken in it’s natural form as fresh garlic. Garlic has been shown to lower blood pressure and manage blood pressure for long periods of time. Garlic has the ability to help you use iron more effectively, so if you are low in iron and taking an iron supplement also take Garlic.

Garlic can help prevent the accumulation of fats in the liver. Garlic increases bile flow from the gallbladder thus it helps to prevent gallstones and congestion of the liver. Studies have shown that garlic pills and capsules don’t work well, it needs to be fresh garlic with that pungent odor.
