Kaniwa pronounced Kan-nyi-wa and also known as Chenopodium pallidicaule is a very healthy grain. Kaniwa is a grass seed like quinoa but it contains a lot more protein than quinoa, and it also contains very high quality protein compared to quinoa. Where it Grows - Kaniwa grows in the high plains of Peru and Bolivia and other countries in South America. And it grows in places where quinoa will not grow because it’s much heartier and resists cold spells, drought, and pests, and kaniwa is related to swiss chard, beets, and spinach.

Lots of Protein - Kaniwa has more protein than quinoa, per 100 grams kaniwa contains 16 grams of protein while quinoa only contains 13 grams of protein, and kaniwa contains 10 essential amino acids. Kaniwa is a great protein source for vegans and vegetarians.

Taste - Kaniwa has a nutty sweet taste which is very similar to quinoa, but the seeds are half the size of quinoa.

Can be Sprouted - Kaniwa seed can also be sprouted for an even more nutrient dense live food source.

Color - Kaniwa is red brown color because of all the powerful antioxidants.

More Antioxidants - Kaniwa also has more antioxidants than quinoa including lots of flavonoids such as quercetin and isorhamnetin. Both of which are very important for getting rid of free radicals thus helping to prevent and repair DNA damage. And kaniwa also help to prevent diseases such as cardiovascular disease, strokes, and cancer… and slows the aging process.

Cooks Fast - Take 1 part kaniwa and 2 parts water and simmer on low heat for at 15 minutes. Then turn off the heat and put the lid on the pan and allow it to sit for 10 minutes and it’s ready. And cooking does not change the nutrient profile of kaniwa unlike some foods which lose nutrition with cooking.

Using - Kaniwa can be used in sweet dishes and also savory dishes. And kaniwa is great with fruit for breakfast, also for use in soups, stews, casseroles, and even in salads. And any where that bulgar wheat, quinoa, and other grains can be used kaniwa can also be used. And kaniwa makes a nice substitute for bread crumbs for lots of dishes.

Great Flour - Kaniwa also makes a nice gluten free flour. Kaniwa flour is call kanihuaco which is very delicious and can be made into breads, pastries, puddings, noodles, cakes, muffins, and anything else that wheat flour can be used for.
