I love healthy, easy to prepare meals.

Probably not unlike you I work long hours and I can't say cooking is one of my favourite hobbies:

However I love eating, I love being healthy and most of all I love good food that is good for me.

I have found in recent years that platters make easy to serve meals, they are inexpensive and go a long way.

Either used peeled & cooked Australian prawns, steam your Atlantic Salmon let cool:

(If you are not a seafood person, you can always cook a Lamb strap. Piece of Good Quality steak say rump, chicken or a Pork fillet) after cooking slice into thin slices and place in the salad. You can even buy a cooked Lilydale/organic chicken and break up among the salad as well.

Juice 1 x lemon, 1 x orange, 1 x grapefruit: grate 3 cloves of garlic, mix together

Prepare a platter with a base of mix lettuce, cocktail tomatoes, diced cucumber, capsicum, fetta cheese, mango & pear; Nuts such as walnut, pine nuts or slivered almonds make a lovely addition to this mix.

Pour over some lemon infused garlic oil; then place prawns & Atlantic Salmon or your other topping of choice, over the salad spread, then pour over seafood your citrus & garlic mix.

If you are vegan or vegetarian of course you can do without the meat protein and include beans, lentils or tofu.

Top with some mint & or coriander leaves:
