Great that Spring is Here, I love the easy, light meals that we can start enjoying

Enjoy the wonderful refreshing tastes of citrus combined with prawns
If you are not a lover of prawns, you can use scallops, calamari or any other seafood of choice.

If you are not a seafood lover you can use sliced or diced
organic chicken breast

Ingredients:

-500 gms – raw prawns, cleaned and deveined
- 1 - 2 tomatoes diced
- 1 cucumber– diced
- 1 medium red onion – diced
- 1 - 2 cups of baby spinach or rocket– roughly chopped
- 1 Red capsicum sliced and diced
-1 Lime juiced
- 1 Orange juiced
- 1 Lemon juiced
- 1 tblespn Garlic infused olive oil
-1 handful of crumbled fetta cheese
- 1 tblespn of red chili flakes

Directions:

Allow a litre of chicken or vegetable stock to come to the boil, for extra flavour you can add 1/2 cup of white wine
Put your seafood of choice prawns, scallops or calamari into boiling stock for about 5 minutes
If doing chicken this will take about 10 - 15 minutes

Allow to cool in fridge for about 20 mins

Whilst this is cooling: Mix together the juice of orange, lemon, lime and garlic infused olive oil

In a bowl combine tomatoes, cucumber, rocket & or baby spinach, capsicum and onion. Add your cooled seafood or chicken then pour over citrus and oil mix

Serve with fresh avocado and fresh warm rye bread
