Potassium for High Blood Pressure

*** HEALTHY RECIPES - Fresh Fruit lunch - Serves 4***
Fresh Fruit lunch - Serves 4     

INGREDIENTS -
4 cups low-fat cottage cheese
2 small peaches cut into wedges
2 Macintosh apples cut into wedges
1 1/2 cups Mandarin orange sections
2 sweet pears, cut in wedges
2 Tablespoons chopped almonds
1 cup white raisins
2 cups white grape juice
2 Tablespoons lemon juice
3 teaspoons cinnamon
2 teaspoons nutmeg
1 teaspoon vanilla extract (optional)

In large saucepan bring juice, cinnamon, nutmeg and vanilla to a boil. Add apple, peaches and pear, pour lemon juice on top of fruit, return to a boil and cover. Reduce heat to a simmer and cook approximately five minutes. Add orange sections and simmer another minute. Remove from heat.  Serve over scoops of cottage cheese and sprinkle with raisins and almonds.
